I love making these turmeric treats when I’m on the go, or want a snack at work. The fat from the coconut oil and the protein from the almond meal and sunflower seeds will provide a hearty snack that will sustain your energy and contribute to balanced blood sugars. Turmeric also helps to normalize blood sugar by improving insulin’s ability to bind to sugar. This is an antioxidant-rich tasty snack you will want to time and time again. So, make a double batch and enjoy the anti-inflammatory benefits from the dried turmeric powder, twice!

Almond-Coconut Turmeric Snacks
Makes 4 snacks, about 1 1/2 inches in diameter

2/3 cup almond meal
1/4 coconut flakes
1/4 cup sunflower seeds
2 tablespoons, plus 1 teaspoon coconut oil
2 pitted dates, chopped
1 teaspoon monk-fruit powder
8 capsules of turmeric powder, capsules emptied
Dash of black pepper

Turmeric Snacks

Combine all ingredients in a food processor and blend until thoroughly mixed. Roll into 4 equal sized balls, about 1 1/2 inches in diameter. Refrigerate to harden.

Note: Dried turmeric powder can taste bitter, especially if you’re not used to it. You can use fewer capsules to adjust the taste to your liking. Turmeric can stain clothing and plastic, so take proper precaution when making these tasty bites!
